This new line of organic, bronze-die extruded long pastas are handcrafted by Maurizio of Allemandi, a trained chef and pastaio from Piemonte. This linguine is made with organic Umbrian wheat and certified Aqua di Piemonte mountain water. Umbrian wheat is a high-quality durum semolina with a high protein content, giving the pasta an impeccable texture. This linguine is excellent with clams, butter, and white wine as vongole, or with shellfish such as mussels, scallops, and crab. It is also a perfect pasta for pesto, fresh tomatoes and ricotta, or lemon and butter.
