These small and delicate olives are 100% Taggiasca and are hand selected and harvested and processed on the same day. The olives are washed for a month with just water and then continue to ferment in brine, along with thyme and bay leaves. These olives are made naturally, in an ancient tradition of preservation and without the use of starters, chemicals or preservatives. This results in delicate olives produced according to traditional techniques. These olives are an elegant addition to antipasto, cheese plates, tinned seafood, and smoked meat platters. They pair perfectly with white meat like rabbit – a true Ligurian delicacy.
